when it's made properly...
so! i put on a little al green/isaac hayes/curtis mayfield and the like to get us in the mood. okay, okay...warren and i had actually had quite an altercation this morning over apparel decision, so i needed something to keep me mellow. and hey - every chocolate cake needs a little soul, right?
everything was going beautifully...minimal mess, high interest level from my helper...even some excitement over the transformation from butter and sugar to this beautiful chocolate batter! into the nicely floured cake pans the batter goes, and the oven is almost preheated. warren and i enjoy the requisite licking-of-the-bowl ceremony,

and i begin to clean up.
and that's when i realized i'd forgotten to add the vanilla in. i seriously contemplated trying the cakes without it...but then i realized i had actually omitted the last TWO ingredients...what?! sigh.
out of the beautifully prepared cake pans comes the batter, back into the freshly washed bowl. the also-freshly washed beaters go back into the mixer (did i mention we're doing this all with a handheld mixer? i just couldn't stomach hauling my kitchen-aid stand mixer down here and back...so this is truly a labor of love!). in go the final ingredients. batter is ready. cake pans are re-washed, re-sprayed, and re-floured. batter is poured back in, and we're ready to go into the definitely pre-heated oven!
so here we are. 20 minutes or so from now, i'll see what these cakes look like...the only thing that really scares me is that the batter was sooo delicious from the first go-round. when i added the other ingredients, not so much. hmmm-perhaps the recipe needs a tweak after all these years? who knows...for now, i'll just settle for them baking at all!
